This warm meal is great for any occasion. Prep time is 20-30 min.
Ingredients: (Lets set these Items up)
1 Bunch Bok Choy
2 Cans of Coconut Milk
1 cup of chopped Green Onions
3 Garlic Cloves
2 table spoons of Olive Oil ( or any oil you prefer)
2 tsp of Celtic Sea Salt
Grab a Pot.
First I like to place the olive oil and drizzle in on the bottom of the pot, I let it heat up and then add the 3 Garlic Cloves minced. Then I add the 1 cup of chopped green onions. Finally, throw the 2 tsp of of salt. I allow that to saute at the bottom of the pan till it turns a golden brown.
Once you get it to a golden brown, go ahead and add the 2 cans of coconut milk. Stir that a bit and allow the milk to simmer.
Once its simmered, Get the Bok choy Bunch and make sure its already washed and pulled apart. Go ahead and place it in the pot. Place the top on and let it warm up. It should be about 5 min for it to reach a good temperature.
There you go.
That is how easy it is.
I got my prepped sweet corn, zucchini, cabbage and used that as the main base. Then I poured the soup on top, getting a good amount of the bok coy. On top I garnished with celery and Bell Peppers.
It was a heart meal. Also keeping most of the nutrients in all the veggies as the veggies were kept in its raw form.
